Today is 1-1-11. Or, 01-01-11. Or, 1111.
Isn't it lovely to contemplate numbers and their patterns? I was thinking that Veterans Day this year will be 11-11-11 and surely that deserves some special acknowledgement. Just random wandering thoughts here.
It is New Year's Day and I do know that deserves one of our traditions. It's made. It's ready. I just haven't eaten it yet. That will be remedied very very soon, trust me.
Ah, Hoppin' John. Great on a cold night. But, you may ask, who is John and why is he hopping? No idea. However, if you would like the recipe, here it is:
3 lbs ham hocks
3 cups black-eyed peas
1 onion, chopped
1 jalapeno pepper, chopped
1 bay leaf
chicken stock to cover
rice
cilantro
green onion
spinach
Cover the peas with water and let stand overnight. Drain. Cover with chicken stock. Add ham hocks, onion, pepper, bay and seasonings to taste. Bring to a boil. Lower to simmer and simmer for 2 1/2 hours. Remove the hocks, let cool, remove the meat in shreds and return to the pot.
Serve over white rice and garnish as desired with cilantro, onion - or add spinach or cheese.

Happy New Year to you Judi! I love numbers too, and love their patterns. When I saw the movie A Beautiful Mind, I was knocked out by the math patterns and how they effected his life. Well, your meal looks great, and I have Eggplant Parmesan. in the oven that needs to come out! Happy New Year!
